Egg rolls are the best crispy, crunchy Asian comfort food that reminds me of childhood Chinese takeout nights, and high school food truck days. But when it comes to every day eats, I’m not about to make my own at home.

And to be honest, it’s that meaty, savory filling that I’m all about. There’s something about the flavor combination that gets my mouth watering every time!

This is my low-carb, one dish, 15 minute version that I look forward to in the meal rotation. It’s paleo, keto, and Whole30 friendly, and can easily be upped in carbs if you serve it over white rice!

We eat it alone, straight out of the bowl with the easiest “Spicy Mayo” that takes all of the flavors up a notch and adds the perfect creaminess (coming from someone that doesn’t even love mayo!)

One of my favorite parts about this dish: we almost always have everything we need for it on hand. For the protein, you can use any ground meat you like – beef or pork are our favorites! Shrimp works well too, I just chop it up into small pieces so you get a little in each bite.

Heads of fresh cabbage are usually pretty easy to find at the store, but if you’re in a pinch – grab a bag of coleslaw mix! It’s just a blend of carrots and different colors of cabbage that will work perfectly in this.

One more substitution note – apple cider vinegar works perfectly in place of rice vinegar if you don’t have it! Or you can always omit it completely. This recipe is super forgiving – you can’t go wrong! Any other questions, just leave them in the comments below!

Ingredients

Stir Fry Sauce

  • 3 Tbsp coconut aminos
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp toasted sesame oil
  • 1-2 tsp hot sauce

Egg Roll Stir Fry

  • 1 Tbsp avocado oil
  • 1 lb ground pork or beef
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried ginger or 1 Tbsp fresh
  • 1/2 head green cabbage sliced into thin 1-2" strips
  • 1 cup shredded carrots about 2 large carrots
  • 3 green onions, sliced thin for garnish
  • sesame seeds for garnish

Spicy Mayo Sauce

  • 1/4 cup mayo
  • 1-2 tsp hot sauce

Instructions

  • Combine the stir fry sauce ingredients in a small bowl by whisking with a fork, and set aside.
  • Heat the avocado oil in a large skillet over medium to medium high heat until warm. Add the pork, garlic, salt, pepper, and ginger, and cook until the pork is broken into crumbles and browned (about 5 minutes).
  • Add the sliced cabbage and shredded carrots, and continue to stir fry until the cabbage is tender (about 5 more minutes). Stir in the "Stir Fry Sauce", and continue cooking for just a minute to combine the flavors.
  • Make your "Spicy Mayo Sauce" by mixing the mayo and hot sauce in a small bowl until combined.
  • Scoop the "Egg Roll" stir fry into bowls and top with sliced green onions, sesame seeds, and a drizzle of Spicy Mayo Sauce. Enjoy!

Notes

  • Ground pork and ground beef work well in this recipe – but you could use any ground meat, like chicken or turkey.  Shrimp works great too, just chop it up into bite sized pieces before cooking.
  • Don’t have cabbage on hand, or can’t find it?  Swap it for a bag of coleslaw mix – which is just a blend of different colors of cabbage and shredded carrots.  It’s an easy shortcut substitution you can make in a pinch.
  • No rice wine vinegar?  Swap it for apple cider vinegar, or omit it altogether.  It adds flavor, but isn’t essential.
  • Toasted sesame oil adds great nutty flavor, but can be left out if needed.
  • Another great topping for this dish:  Everything But the Bagel seasoning!  We get ours from Trader Joe’s.  Adds two types of sesame seeds, and some extra onion-garlic flavor.
  • For the mayo, I love the Primal Kitchen Foods brand.  They use an avocado oil base, and it has a great mild flavor – and I’m not usually a mayo fan!
  • Any hot sauce will do, but sriracha works great if you have a brand you love!
  • Fancy Plating Hack:
    • Spoon your Spicy Mayo Sauce into a small plastic bag, cut a small corner off of the bottom, and squeeze out in a pretty zig-zag pattern.  We eat with our eyes first after all!  But of course you can plop a spoonful on top and it will taste just as great
