Easy, full of flavor, and makes the most of your time in the kitchen 💪🏼

I preheat the oven first then start the sweet potatoes. Add the green beans later on (same oven / temp) and cook the beef on the stove at the same time. Easy peasy, all finished around the same time & ready to serve or stash away in bowls.

Super family friendly & hearty! Comfort style food that loves me back 🙌🏼

BBQ BEEF
- 2 lbs ground beef (can sub one or both lbs for turkey or bison if you prefer!)
- 1 cup bbq sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper to taste

Cook the meat until nice and browned and crumbled then stir in seasonings and bbq sauce and warm through!

Makes 6 servings 1 cup each

SWEET POTATOES
- 2-3 large sweet potatoes

Roast in the oven directly on the rack at 425°F for 45 min or until nice and soft.
Let the potatoes cool until you can handle them then break in half and scoop out the insides & mash with a fork.

Makes 6 servings 1/2 cup each

GREEN BEANS
- 3 cups green beans, trimmed
- Salt, pepper, garlic powder (about 1/2 tsp each)

Line a baking sheet with parchment. Spread the green beans out in a single layer and spray with avocado oil then sprinkle with salt, pepper, and garlic powder.

Bake at 425°F for 25 min or until they start to crisp and brown a bit.

Makes 6 servings 1/2 cup each

For a bowl with 1/2 cup sweet potato, 1/2 cup green beans, 1 cup bbq beef:

450 calories 30g protein 22g fat 30g carbs

One of my favorite go to recipes to make for dinner and double as meal prep for lunches 🙌🏼

Easy, so full of flavor, family friendly, and tons of protein packed in yet still low cal. This one is a crowd pleaser! And the chicken is truly one of my top things to eat ever 🤤

🍚FOR THE RICE🍚
1:2 ratio rice to broth (or water)
For 3 cups rice/6 servings (I do 1/2 cup for a serving):
- 1 cup rice
- 2 cups bone broth
- can spray the inside with avocado oil spray or add a tiny bit of butter if you like 🤎

Set the valve on the instant pot to “sealing” then “rice” setting to cook on low for 12 min. Let the pressure release on its own while you cook the chicken & veggies.

🍗FOR THE CHICKEN🍗
For 6 one-cup servings:
- 3 lbs boneless skinless chicken (macros with breasts but thighs are actually my favorite in this!), cut into bite sized chunks
- 1/2 cup coconut aminos (soy sauce works too)
- 2 tbsp minced garlic
- 2 tbsp minced ginger
- 2 tbsp honey
- 1 tbsp rice wine vinegar

Add the marinade ingredients to a large bowl, whisk, then add the chicken and toss.

Head a large skillet to high heat and add the chicken with all of the marinade. Cook, stirring occasionally, until chicken is cooked through and the marinade becomes thick and brown and “sticky” 👍🏼

🧅FOR THE VEGGIES🍄‍🟫
Serving = 1/2 cup cooked veggies
About 4 cups chopped veggies total:
I did a mix of
- crimini mushrooms
- 1 red bell pepper
- 1/2 white onion
- 1 zucchini
- Avocado oil spray
- Salt & pepper

Preheat the oven to 425°F. Line baking sheet with parchment. Add veggies chopped into bite sized pieces and spray with avocado oil spray, season with salt & pepper.

Bake 10 min then broil for 3-5 for some color.

🍱 Each bowl 👇🏼
1/2 cup bone broth rice
1 cup hibachi style sticky chicken
1/2 cup cooked veggies
Drizzle sriracha & garnish with sesame seeds and green onion

465 calories 56.5g protein 7.8g fat 39.9g carbs 🤌🏼

👇🏼High protein breakfast burrito bake

An easy one to throw together, no pre-cooking required just assemble and bake 👍🏼

This breakfast is the perfect balance of light yet filling, and has all the flavors of a breakfast burrito yet super easy to toss together & great low cal / high protein macros 🙌🏼 super family friendly too cannot wait for you to try! If you slice into 6 servings, each is 300 calories (29g protein 10g fat 19g carbs).

🌯BREAKFAST BURRITO BAKE🌯

- 8 eggs
- 1 cup egg whites
- 1/2 tsp each: garlic powder, onion powder, oregano, chili powder, salt, black pepper
- 16 oz frozen hash browns (only ingredient is organic potatoes 👍🏼)
- 16 oz fully cooked chicken breakfast sausage links (I used two 8 oz packs)
- 1 red bell pepper, chopped
- 4 oz can diced green chiles
- Optional sliced green onion for topping

Preheat the oven to 375°F. Line a 9x13” baking dish with parchment paper and set aside.

Whisk the eggs and white with spices.

Add the hash browns to the dish, then sausage, then peppers & chiles. Pour the egg mixture over top & give it a light mix to distribute everything evenly in the pan. Top with green onion if you like for color & flavor.

Bake for 55 min or until the center is set (cook time varies a bit by oven)

Cool for a few then slice into portions and serve or refrigerate in containers OR wrap tight & freeze! 🤎

For 6 servings portion:
300 calories 29g protein 10g fat 19g carbs

For 8 servings portion:
226 calories 22g protein 7.5g fat 14g carbs

High protein, low calorie, and done in under 30 ✔️ my shortcut lasagna has a few hacks to keep it lower in fat with 30g protein per serving and tasting like it cooked all day 🙌🏼

Makes 12 servings so it’s dinner & meal prep in one (even better next day!)

Serve it alone or with a big side of green beans or green salad for more volume - often I’ll do a big handful of spinach at the bottom of my bowl then serve “lasagna” hot over top!

🍝LAZY GIRL LASAGNA 🍝

- 1 box pasta of choice (using chickpea pasta for higher protein, fam likes shells!)
- 1 lb ground beef
- 1 lb ground bison
- 32 oz jar marinara style sauce (using Classico Organic Tomato, Herbs, & Spices from Costco!)
- 1 tsp garlic powder
- 1 tsp onion powder
- salt & pepper to taste
- 1 tbsp coconut aminos (optional for flavor)
- 1 cup frozen chopped kale
- 1 cup part skim ricotta cheese
- avocado oil spray
- 1/2 cup shredded mozzarella
- Italian seasoning + parsley to sprinkle on top

1. Cook the pasta according to package. While water boils & pasta cooks 👇🏼
2. Cook the ground beef and bison until browned and crumbled fine.
3. Stir in sauce, kale, and spices and simmer for a few. Preheat the broiler on the oven
4. Add the pasta & swirl in the ricotta.
5. Spray a rectangle baking dish with avocado oil spray then pour the lasagna pasta mix in.
6. Top with shredded cheese, Italian seasoning, and parsley.
7. Broil in the oven for 3-5 minutes or until just bubbly and browning.
8. Slice into 12 on top so you can eyeball a serving and enjoy!

For when you’re craving a takeout style breakfast burrito but also have goals and want to hit your macros 🙌🏼 this always hits the spot for me while saving a ton of calories and fat and adding extra protein. My version of my favorite takeout breakfast burrito I looove but better!

You can cook up a pound of sausage & make each burrito fresh daily (just reheating the amount of sausage you need like I did here) or make several burritos at once for meal prep. Then reheat / crisp up if you like when you’re ready to serve!

🌯FOR EACH BREAKFAST BURRITO🌯

- 1 large tortilla (using Ole Xtreme Wellness High Fiber Wrap here)
- 1 oz cooked chorizo sausage (or whatever sausage you like! chorizo is higher fat so I do a little less than I would with others - packs lots of flavor though so don’t need much!)
- 1 egg
- 1/3 cup egg whites
- 1 tbsp shredded mozzarella
- 6 tater tots (I like the frozen organic ones from Cascadian Farms)
- hot sauce if you like
- avocado oil spray for cooking the eggs, plus a light spray if you like on the burrito before crisping!

340 calories 28g protein 30g carbs (18g fiber!) 16g fat
