These Birthday Cake Batter Energy Bites are a wonderful healthy treat option made to give you an energy boost without a sugar crash!
Why this Recipe is So Good
These Birthday Cake Batter Energy Bites can be made with raw honey, or stevia if low-carb is a priority to you. Either way, you’ll be fueled with healthy fats from cashews, coconut oil, and coconut butter, and you’ll get a buttery cake flavor from a touch of ghee and splash of vanilla. Finish off your bites with a handful of sprinkles for fun! I found these on Amazon lately and love the ingredients for fancying up my healthier treats.

Did I mention these energy bars are not only delicious and the perfect snack, but they are so easy to make?
Here’s what you need:
- Cashews
- Coconut Oil
- Raw Honey
- Coconut Butter
- Ghee
- Vanilla Extract
- Salt
- Sprinkles
In a food processor, add all of the ingredients and gently pulse until smooth. Using a cookie scoop, add a scoop to a baking sheet or plate lined with parchment paper. Put in the freezer for at least 1 hour. Store in the refrigerator. It’s that easy!
Notes and Substitutions
- For the cashews, I go for cashew “pieces” which blend easier and are often cheaper – especially when buying in bulk! Trader Joe’s and Whole Foods are great places to grab them, or check Amazon!
- To make these keto-friendly, omit the honey and replace with liquid stevia. Add a few drops at a time until you get the level of sweetness you prefer. About ¾ tsp does the trick for me! We use THIS organic liquid stevia.
- Mix in a few scoops of collagen if you want some protein added for post-workout!

Birthday Cake Batter Energy Bites | Paleo, Keto
Ingredients
- 1 1/2 cups Raw Cashews
- 1/4 cup Coconut Oil melted
- 1/4 cup Raw Honey (see notes for Keto)
- 1/4 cup Coconut Butter
- 1 tablespoon Ghee
- 1 teaspoon Vanilla Extract
- pinch Salt
- 1/4 cup Sprinkles
Instructions
- Line a plate with parchment paper and set aside
- Add the cashews, melted coconut oil, honey, coconut butter, ghee, vanilla and salt to a food processor and pulse until smooth. Pour the sprinkles and pulse a couple more times, just enough to stir in the sprinkles (or mix them by hand!)
- Use a cookie scoop to scoop balls of your "batter" onto the lined plate. Transfer to the freezer to set (about 1 hour will firm them up), then store in the refrigerator. Best served chilled.
