Hi guys!
During my recent blogging hiatus, my diet has shifted a little. I haven’t been eating “Perfectly Paleo”, and have let a few things slip in here and there. And, well… to be honest… I’m feeling pretty happy about it! My diet feels balanced, and I am enjoying some of the foods I’ve missed. I’ve actually lost more than a few pounds over the past month too~ which is just fine with me!
I’m still avoiding soy, gluten, and overall processed foods as much as I can… Just enjoying things in moderation, and listening to my body regarding how I feel after each meal and over time as well. Small amounts of dairy & grains here and there haven’t been upsetting my system, so I’ve just sort of “gone with it”.
I’m currently trying to shed a few more pounds of fat, while getting back into exercising regularly & building some strength back. This was a day where I did not work out, so I felt pretty good about the lower calorie count. Still always trying to keep my protein up, and get in some good carbs. Check at the bottom of the post for calories & macros for the day! 🙂

I call these my “coffee helpers”… Vanilla Créme stevia drops & some light coconut milk.
Breakfast: 1/2 Siggi’s 0% vanilla yogurt, 1/3 cup organic blueberries, 1/4 cup Kind Granola “Oats & Honey with Toasted Coconut”, plus coffee with my vanilla stevia drops & 1/4 cup lite coconut milk
Lunch: baby carrots, sugar plum tomatoes, spinach, Columbus peppered turkey breast, True Story ham slice, and 1/2 serving of Blue Diamond Almond Nut Thins
(Finger food plate! I tore up the deli meat & stacked it on the crackers with pieces of spinach~ so good!)
Snack: 1/2 pink lady apple, celery, and 2 Tbsp Barney Crunchy Almond Butter
Dinner: Spinach & Kale salad with tomatoes, red & orange bell pepper, balsamic vinegar, and EVOO, topped with my new baked chicken recipe!
Evening Snacks: 2 cups Fit Popcorn from Popcorn Indiana (while I watched TV!) & a late night Quest Bar (Chocolate Chip Cookie Dough flavor) that I split into 6 pieces & baked into mini cookies.
Daily Total:
Calories: 1,124
Carbs: 110g | Fat: 48g | Protein: 80g

September 30, 2015 at 5:54 pmI'm going back and catching up on some of your posts that I have missed, and the idea of making the Quest Bars into cookies and baking them is genius! I am going to try that ASAP. I like the flavors but I get tired of the texture of the Quest Bars so this will make it much easier to eat them!
