Nothing super exciting, but I thought you might like to see what I eat on a typical mid-workweek day when I’m not feeling super creative. Just simple, effective meals & a snack to get me through the drive home. 😉

- Breakfast: leftover sautéed kale with 1 Aidells chicken apple sausage & 1 hard boiled egg (plus hot sauce!); coffee with coconut milk, cinnamon, & dash of sea salt
- Lunch: “Crispy Oven Fried Chicken” & steamed broccoli
- Snack: cherry tomatoes & baby carrots, La Croix mineral water (strawberry pineapple)
- Dinner: Chipotle salad with carnitas, mild salsa, medium salsa, & guacamole
