Looking for the perfect soft & chewy sugar cookie recipe, but want to make it extra special? I’ve got you covered for the holidays and beyond with this festive ginger spice sugar cookie that is gluten free yet has the most perfect soft & chewy texture. Top it with my classic sugar cookie frosting & your friends (and tastebuds!) will be begging for more!
My favorite sugar cookie base gets a festive upgrade with warm cozy spices and a brown sugar twist for the perfect taste & texture!
I love this recipe for sharing with a crowd around the holidays! The spices are *just right* – not too intense with the ginger or clove… just enough to be festive and warm without overpowering.
You can totally jazz up the icing with a little cinnamon mixed in or some pretty colored sprinkles on top too!
You can halve the recipe for just one dozen cookies – but I highly recommend making the full double batch so you can make a new friend on your street or send some home with family!
They’re the perfect cookie to share, and save really well in an airtight container at room temperature, for up to 10 days in my experience.
Hope you love these as much as we do!!
Frosted Soft & Chewy Ginger Spice Sugar Cookies
Ingredients
For the Cookies
- 2 1/4 cups gluten free flour
- 2 tsp dried ginger
- 1 tsp cinnamon
- 1/4 tsp clove
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp baking soda
- 3/4 cup butter softened
- 1 1/4 cups light brown sugar
- 1 egg
- 2 tbsp maple syrup
For the Frosting
- 1/4 cup butter softened
- 1 1/2 cups powdered sugar
- 3 tbsp milk of choice
- 1 tsp vanilla extract
Instructions
For the Cookies
- Preheat the oven to 350ยบF and line two baking sheets with parchment paper (or just one if cooking half a batch at a time).
- To a bowl or stand mixer, add the softened butter, sugar, egg, and maple syrup and mix until smooth.
- Add the flour, ginger, cinnamon, clove, nutmeg, salt, and baking soda, and stir until completely mixed.
- Scoop rounds of dough onto the parchment lined baking sheet and press down slightly with your fingers to flatten just a little (or leave them to bake in rounds if you like more thickness).
- Transfer to the oven and bake for 12 minutes or until just set. Let the cookies cool on the baking sheet for a few minutes to firm up before transfering to a cooling rack.
For the Frosting
- While the cookies are baking, use a fork or whisk attachment on mixer to whip the butter.
- Add the powdered sugar until smooth.
- Add the milk & vanilla and whip until smooth and creamy.
- Add the room temperature frosting to the top of each cookie, smoothing the top with a butter knife. Enjoy!
Notes
- The cookie dough can be made ahead & baked any time!ย Just store in the fridge until ready to bake.
- The frosting can also be made ahead – just bring to room temperature before using.

December 20, 2023 at 4:14 amOh no so strange! Any chance you missed an ingredient – perhaps the baking soda or egg? They should be extra thick like little “rounds” if anything, which is why I press down a bit to flatten them.
