They’re easy, they’re cheesy, they’re veggie-packed, and they’re sooo delicious! I cannot wait for you to try this recipe! I started out making this as a breakfast for Ford – a way to get some extra greens in. They ended up becoming a favorite for us all!

I used zucchini, broccoli, and spinach, but you can really do any veggies you like! If you’re not into dairy, you can substitute nutritional yeast for that flavor. But if you can do dairy… I love the flavor and texture the cheddar adds to these!

This is a great meal prep option for kids AND adults alike, and seriously a crowd pleaser! Feel free to double the recipe and bake in a larger dish if you want to get more servings – this makes 16 sticks which go quick around here!

Cheesy Zucchini Breakfast Sticks

Ingredients

  • 1 tsp olive oil
  • 1 cup grated zucchini
  • 1 cup broccoli florets chopped
  • 1/2 cup baby spinach chopped
  • 3 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp flour (any kind!)
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried Italian herb seasoning

Instructions

  • Preheat the oven to 350ºF. Line an 8 or 9" square glass baking dish with parchment paper (or grease well) and set aside.
  • Heat the olive oil in a skillet over medium heat. Add the zucchini, broccoli, and spinach, and sauté for 3 to 5 minutes or until the vegetables are just soft.
  • In a medium mixing bowl, whisk the eggs. Stir in the shredded cheese, flour, and spices until well combined. Add the cooked vegetables and stir.
  • Scoop the mixture into the lined baking dish and transfer to the oven. Bake for 20 minutes or until the eggs are set.
  • Allow the dish to cool, then slice into "sticks" (or whatever shape you like!). Store leftovers in the fridge, and consume within 5 days (or freeze for later!)

Notes

Any flour will work for this recipe – it’s just a small amount to help bind it together!  Coconut, almond, gluten free all purpose… whatever you’ve got!
