Simple ingredients, lots of flavors, and will leave you feeling a whole lot more satisfied than a boatload of chips! (Although I do love me some chips now & then, haha)
Have you tried my Chicken Fajita Poppers? These are them… but pizza style! And they are absolutely DELICIOUS. Even Hudson eats them up.
How to Make Chicken Pizza Dippers
They’re so easy, I’ve even made them a couple of times during moving. That’s saying something you guys – haha! Here’s what you need:
- Boneless Chicken Thighs
- Pepperoni
- Green Peppers
- Red Onion
- Red Pepper Flakes
- Garlic
- Oregano
- Dried Basil
- Garlic Powder
- Olive Oil
- Pizza Sauce or Ranch
The cooking struggle is real when life gets really busy, but these guys can even be cooked, frozen, then reheated. Check out my freezer guide and use the meatballs instructions – so easy.
Notes
- Substitute ground chicken if you’d like. Go for darker meat with some fat to it so the dippers aren’t too dry and hold together better. Skip the food processor and combine your ingredients in a large bowl before scooping and flattening into “dippers”.
- Can’t find Whole30 compliant pepperoni? Feel free to leave it out if you’re currently doing a round of Whole30, and save it for your “food freedom”. We love the Applegate and Wellshire brands for pepperoni but theirs aren’t compliant even though the ingredients are very clean.

Chicken Pizza Dippers
Ingredients
- 1 lb Boneless, Skinless Chicken Thighs
- 1/4 cup Pepperoni chopped
- 1 Green Bell Pepper sliced thin and diced
- 1/2 Red Onion diced
- Pinch Red Pepper Flakes
- 2 tsp Garlic minced
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Basil (or 2 tbsp chopped fresh)
- 1/2 tsp Garlic Powder
- Olive Oil for cooking
- Pizza Sauce or Ranch for dipping *double check ingredients if making Whole30 compliant
Instructions
- Preheat the oven to 400ºF. Line a baking sheet with parchment paper or lightly grease with olive oil.
- Pat the chicken dry with paper towels, then place in a blender or food processor. Pulse until the meat is broken up into small pieces and holds together – almost like ground chicken.
- Add the remaining ingredients (peppers, onion, garlic, spices) and pulse for a minute or two, until everything is combined.
- Use a cookie dough scooper to scoop heaping tablespoons full of the mixture onto the lined baking sheet. You can leave them as is, or use your hands to flatten them a bit into a shape that's easy to dip into pizza sauce.
- Brush the tops of the dippers with a light layer of olive oil, or use a sprayer to lightly coat them.
- Transfer to the oven, and bake for 25 minutes. Broil for 3-5 minutes at the end to brown the tops.
- Serve hot, dipped in pizza sauce or ranch!
Notes

- PIZZA SAUCE: Rao’s, Mezzetti’s, Cucina Antica, and the Whole Foods 365 brand make great sugar free options!

December 18, 2020 at 10:18 pmIt’s been awhile since I’ve done a round of Whole30, but Applegate used to do one! And I believe Wellshire Farms had one as well
