This Banana Oat Muffins recipe is super easy.  All you do is toss your ingredients in, blend until smooth, and bake.  They’re super moist, don’t stick to the baking cups a single bit, and are just the easiest.

I love these for babies and kids because the ingredients are super clean, and there’s no added sugar.  We like switching up the nut butter each time so that Hudson is always being exposed to different allergens.  Peanut butter is our favorite, but almond butter and cashew butter are so tasty too!

They’re great to make ahead too:  You can make a big batch, eat some fresh and pop the rest in the freezer!

How to Make Banana Oat Blender Muffins

These muffins are super easy to make. All you need is a blender and muffin tins! Here’s what else you need:

  • Bananas 
  • Eggs 
  • Rolled Oats 
  • Peanut Butter 
  • Cinnamon 
  • Vanilla 

 Put everything in the blender and pulse until smooth. Fill the muffin tins and bake!

Notes 

  • You can substitute any nut butter for the peanut butter, or sunbutter if you don’t eat nuts. 
  • Mix-in ideas:  blueberries, chopped walnuts or pecans, shredded coconut, chocolate chips, extra cinnamon & a handful of raisins 
  • Want to sneak some veggies in?  Toss in a handful of spinach, and you’ll have some green “hulk muffins”! 
  • And as great as these are for kids, grown-ups can totally get in on them too.  I love these for breakfast and Dathan loves taking a couple in his lunch to work.  Easy snacks to have on hand!

Another way we love them:  served as “pancake muffins” with a drizzle of maple syrup!  And speaking of pancakes… you can totally cook this batter up pancake-style in a skillet with butter or coconut oil.  It works perfectly!

Banana Oat Blender Muffins

Servings: 10 slices
Calories: 95kcal

Ingredients

  • 2 ripe bananas
  • 3 large eggs
  • 1/2 cup rolled oats
  • 1/4 cup peanut butter
  • 1 tsp cinnamon
  • 1 tsp vanilla

Instructions

  • Preheat the oven to 350ºF.  Line a muffin tin with parchment paper cups or use silicone cups like these which also work freestanding on a baking sheet.
  • Add all of the ingredients to a blender and pulse until smooth.  Pour into 10 muffin cups and top with a few extra oats if you like.
  • Transfer to the oven and bake until set, about 15 to 20 minutes (18 works perfect for my oven).

Notes

Mix-in ideas:  blueberries, chopped walnuts or pecans, shredded coconut, chocolate chips, extra cinnamon & a handful of raisins
Make green “hulk muffins” by adding in a cup of fresh spinach to the batter, and sneak in some extra iron.
