Shrimp is one of our favorites for weeknights because we can store it frozen (we LOVE the Red Argentinian shrimp from Trader Joe’s) and it thaws so fastย in the sink.

A bag of broccoli is just a grocery trip (or Instacart order) away, and we always seem to have that on hand too!

Toss it all on a sheet pan, season… you guys.ย It doesn’t get easier, but it seriously tastes SO GOOD.

I also love how convenient this is for leftovers, because they taste just as good cold as they do warmed up!ย So great to take along with you to work when you may or may not have the opportunity to heat up your food.

Eating on the road?ย Keep an ice pack in your lunch bag, and eat it cold in your car!ย I have eaten plenty of car meals from glass containers in my day, and this would be a perfect one.

Recipe Notes
- We love the large Red Argentinian wild caught shrimp from Trader Joe’s – but any shrimp will do! We get peeled & deveined for convenience.
- Try served over white rice (if you do grains), baked sweet potato, or smashed gold potatoes.
- A little “Everything But the Bagel” seasoning tastes amazing sprinkled over top!

Lemon Garlic Shrimp & Broccoli Sheet Pan
An easy throw-together meal that is bursting with flavor, this sheet pan meal is perfect for a weeknight or anytime you need something quick and delicious.
Servings: 4
Ingredients
- 1 lb jumbo shrimp peeled & deveined
- 3 cups broccoli florets
- 2 Tbsp olive oil divided
- 1 Tbsp ghee melted
- 1-2 Tbsp minced garlic your preference!
- 1/2 tsp dried Italian herb blend
- juice & zest of 1 lemon
- pinch red pepper flakes
- salt & pepper to taste
Instructions
- Preheat the oven to 400ยบF.
- Arrange the broccoli on a sheet pan in a single layer, then drizzle with 1 Tbsp of olive oil and season with salt & pepper.ย Bake for 15 minutes.
- Meanwhile, add the shrimp to a large bowl and combine with 1 Tbsp olive oil, melted ghee, dried herbs, lemon juice, red pepper flakes, and salt & pepper.ย Stir and set aside.
- After 15 minutes, remove the broccoli from the oven and add the shrimp to the sheet pan.
- Sprinkle the minced garlic and lemon zest over top, then return to the oven for 10 minutes or until the shrimp are cooked through but still tender. Serve, and enjoy!
