You know what clearly spells summer to me? G-U-A-C!
Of course it’s amazing all year round, but nothing beats some cool, creamy, chunky guacamole in the heat of summer.
But when your guac gets hit with Baja shrimp ceviche & all of it’s fresh, lime-y goodness!? It is a match made in heaven you guys.
I could seriously make (and actually have made) a meal out of this!
It’s obviously amazing with your favorite chips (we love the Siete grain free tortilla chips or some salted plantain chips)- but you can totally use some veggies for a low-carb yet equally yummy option!
Jicama, red bell peppers, carrots, and cauliflower florets are my favorite to dip in this. Plenty of crunch, and the guac has tons of flavor!
I start off this easy dish by cooking some of my favorite jumbo wild-caught shrimp from Trader Joe’s. Steaming it is an easy step for me that I don’t mind taking- but you can also grab some shrimp that’s already fully cooked!
The shrimp gets mixed in with mashed avocado, your favorite salsa verde, and some zesty chopped veggies- plus plenty of lime! The result is something outta this world, or at least outta this country!
Try this as an appetizer, or scoop some over salad greens for a delicious ceviche guac salad! Add a few sliced veggies & a spoonful of your favorite salsa, and this would really be the perfect lunch! Chips optional 😉

Shrimp Ceviche Guacamole | Whole30, Paleo

Ingredients
- 1/2 lb wild caught shrimp, fully cooked & chopped into bite sized pieces
- 1 1/2 ripe avocados
- 1 large lime (juice)
- handful cilantro leaves, chopped
- pinch salt to taste
- 1/4 cup red onion, finely diced
- 1/2 jalapeno, seeds removed & finely diced
- 1/2 cup salsa verde
- 1/2 cup baby tomatoes chopped
Instructions
- Add the avocados and lime juice to a bowl and mash to your preferred guac consistency (you could even blend if you like it super smooth).
- Stir in the salsa verde, red onion, tomatoes, jalapeño, shrimp, and cilantro. Add salt to taste.
- Serve chilled.
Notes
Try this served as a dip with chips or sliced veggies, or serve it as an entree- scooped over salad greens or into a taco shell.
