While I don’t have kids of my own at this stage in life, I do spend my days surrounded by them.  I work in the fields of pediatrics & education, and get my fair share of kid shenanigans from kids ages 3 to 22.
 
That, combined with the fact that I’m basically a giant 5 year old on the inside, leaves me in a constant state of awareness when it comes to all of the important current events:  like Dr. Seuss’ birthday and “Read Across America Day” on March 2nd!
 

 
My first thought when it comes to basically any holiday is always about what food goes with it.  And when it comes to Dr. Seuss, it’s gotta be “Green Eggs & Ham”.  Now that’s one dish that does not strike up fond memories or an appetite for me.  Eggs mixed with food coloring and some basic ham, somehow cooked in a first grade classroom and smelling up the halls?  Count me out.  At least that’s what first grade Jessie would have said.
 
Yet here I am, 20 years later, mostly an adult, and finally willing to try that scary old dish from elementary school.  So I set out to make a Paleo version (sans food coloring) that would actually taste good. 
 
 
Greens powder took the place of the food dye, adding micronutrients along the way, and “ham” turned into double ham- which naturally included bacon.  The result is green, it’s eggs, and it’s ham… but it’s also actually DELICIOUS & I will be putting this on repeat!  Whether it’s Dr. Seuss’ special day or not.

Green Eggs & Ham Breakfast Bake

Ingredients

  • 8-10 large eggs
  • 1/2 cup coconut milk (or other milk of your choice)
  • 1 tbsp green powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • handful spinach, chopped
  • 1/4 sweet onion, chopped
  • 4 oz (about 8 slices) ham, chopped
  • 2 slices fully cooked bacon, chopped

Instructions

  • Preheat the oven to 350ºF.  Line a 8 or 9" square baking dish with parchment paper, or grease with a cooking fat of your choice.
  • In a large bowl, whisk the eggs, then stir in the coconut milk, greens powder, and spices until mixed well.
  • Stir in the chopped spinach, onion, and ham.  Pour the mixture into the baking dish, and top with chopped bacon.
  • Bake at 350ºF for about 40 minutes, or until the eggs are set.  Slice & serve hot!
