Nothing super exciting, but I thought you might like to see what I eat on a typical mid-workweek day when I’m not feeling super creative.  Just simple, effective meals & a snack to get me through the drive home.  😉

  • Breakfast: leftover sautéed kale with 1 Aidells chicken apple sausage & 1 hard boiled egg (plus hot sauce!); coffee with coconut milk, cinnamon, & dash of sea salt



  • Snack: cherry tomatoes & baby carrots, La Croix mineral water (strawberry pineapple)


  • Dinner: Chipotle salad with carnitas, mild salsa, medium salsa, & guacamole
