First things first…. It’s been WAY too long. & I am so sorry!
My main priority recently has been passing my comprehensive exam:
the biggest hurdle left to jump through before graduating with my Master’s degree, and one step closer to the career I have been working so hard for over the past 5 and 1/2 years.
I am extremely grateful & relieved to say that I have now completely PASSED that exam! I still have a semester of full-time classes, plus an internship before I am completely done~ so the hard work isn’t over yet. It sure is a good feeling though, knowing that I’m SO close 🙂
Anyway… after a far-too-long hiatus from my blog, I am back with a treat! (& it’s chocolate!!!)
Now I know I’m not the first to do an avocado pudding, but I thought I’d share my take on it. It’s chocolatey, decadent, smooth, creamy, delicious, & so much more…. Did I mention it’s made with avocado? This means that you can have a pudding that’s free of dairy, gluten, soy, and refined sugars, all while reaping some serious nutrition benefits.
Avocados are packed with fiber… nearly half of your recommended daily intake can be found in just one medium avocado. They are also super high in potassium (more so than bananas!), and contain several vitamins + more protein than any other fruit. Cocoa powder is quite the superfood as well~ it’s rich in antioxidants, fiber, iron, and magnesium. It also boosts endorphins~ which means it makes you feel happy!
This is a great way to get that chocolate fix without the guilt. I couldn’t even taste the avocado… just chocolatey dessert goodness! Hope you enjoy 🙂

Quick & Easy Bolognese

Ingredients
- 1 ripe avocado
- 3 tbsp cocoa powder
- 4 tsp honey
- 1 tsp vanilla
- 3 tbsp unsweetened almond milk or coconut milk (add more if you want thinner consistency)
Optional Topping Ideas~ unsweetened coconut, sliced almonds, fresh berries, dark chocolate chips
Instructions
- Place all of the ingredients into a food processor, Magic Bullet, or blender.
- Blend until smooth and creamy.
