I spent this past weekend putting lots of love (and time, frustration, and tantrumming) into my blog. The outcome was a few small changes that I think make it just a bit more pretty to look at, and one super functional exciting new addition that took forever but was absolutely worth it… a recipe index!
I am SO excited to have a much more organized and visually appealing way to search my recipe archive.
Now, when you click the “Recipes” tab above, you will be taken to a visual index organized by category. Select the category you’re interested in (appetizers, breakfast, desserts, poultry, slow cooker, whole 30, etc.) and scroll on through the photos! Click again to go straight to the recipe.
This has also been a great way for me to realize which areas I’m lacking in. I’ve realized that I have lots of breakfast & poultry recipes, but am lacking in the beef and slow cooker department.
I also realized that this delicious Texas Chili Soup I created some time ago has been awaiting its blog debut for quite some time now… So here it is!
Another one-dish meal that’s done in the slow cooker. I use simple ingredients that are easy to find, quick to toss together, and delicious to come home to for a hearty dinner. It’s also a great way to get some bone broth in your diet (but feel free to use regular broth if that’s what you have).
Try this topped with avocado & fresh cilantro for garnish, and add a few tortilla or plantain chips for dipping.
The soup itself is Whole30 compliant! Enjoy!
Slow Cooker Texas Chili Soup
Servings: 4
Calories: 239kcal
Ingredients
- 1 lb beef stew meat
- 2 tbsp tomato paste
- 32 oz beef bone broth
- 1/2 white onion roughly chopped
- 1 tsp garlic minced
- 1 jalapeno seeded & minced
- 2 tbsp chili powder
- 2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 15 oz can tomato sauce
- 14.5 oz can diced tomatoes
Instructions
- Prep the veggies by chopping the onion, and mincing the garlic and jalapeño.
- In a large skillet over medium-high heat, sear the stew meat on all sides. This should only take a couple of minutes, as the meat does not need to cook through.
- Add all of the ingredients to a slow cooker, and stir to combine.
- Cook on "high" for 4 hours, or "low" for 6 to 8 hours.
