It’s perfect for breakfast, dessert, or any time in between, and naturally gluten-free (with an easy dairy-free swap too!)
Great Paleo-Based Diet Option
Organic oats and white rice are two grains that I do super well with and have no problem adding into my usually paleo-based diet. And after chatting with many of you – it seems that lots of you are the same!
If you’re into oats, especially the warm and yummy baked variety… you’re in for a treat! Oats have been a favorite for me for breakfast lately and I love that I can feed this to Hudson too.
Nursing mama? This will be right up your alley! I hear so many women sing the praises of oats in their diet and how it really helps with their milk supply. This would be such a great way to get more in, in the most delicious way!
Let’s Get Baking
There are so many different dietary options when making Apple Cinnamon Baked Oatmeal. I’ll get to those in a minute…first what you need for this recipe.
- Rolled Oats
- Baking Powder
- Salt
- Cinnamon
- Nutmeg
- Eggs
- Honey or Maple Syrup
- Ghee
- Milk
- Vanilla Extract
- Apple
- Chopped Walnuts or Pecans
First, combine all of the dry ingredients in a mixing bowl. In a separate bowl whisk the eggs, honey or maple syrup, melted coconut oil or ghee, milk, and vanilla extract. Add wet to dry and stir in the apple and chopped nuts. Transfer to your baking pan and bake for 35 minutes.

- If you are looking for a great organic & gluten-free rolled oats option, I really like THESE
- To make this dairy-free, substitute coconut oil for the ghee
- I use coconut milk in this recipe, but you can substitute whatever milk you like! For another dairy-free option, I love using Nutpods in the French Vanilla or Caramel flavor!
- FREEZER INSTRUCTIONS:
- Bake the oatmeal according to directions, then allow it to completely cool. Slice into squares and wrap individually with plastic wrap then a layer of foil to keep the air out. Freeze!
- To reheat: defrost overnight in the refrigerator. To warm, heat in the microwave or in a 350ºF oven until heated through.

Apple Cinnamon Baked Oatmeal
Ingredients
- 3 cups Rolled Oats (I used THESE which are organic & gluten-free)
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 3 Eggs
- 1/3 cup Honey or Maple Syrup
- 1/4 cup Ghee melted, (plus a bit more for greasing the dish)
- 1 cup Milk*
- 1 tsp Vanilla Extract
- 1 large Apple thinly sliced and chopped
- 1/3 cup Walnuts or Pecans chopped
Instructions
- Preheat the oven to 350ºF. Grease a 9″ square baking dish with some melted coconut oil or ghee, or line it with parchment paper so the oatmeal doesn’t stick.
- In a large bowl, combine the dry ingredients: oats, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the eggs, honey or maple syrup, melted coconut oil or ghee, milk, and vanilla extract.
- Add the wet ingredients to dry, and mix until combined. Stir in the apple and chopped nuts until just mixed.
- Transfer the mixture to the greased baking dish, and top with a few extra pecans or walnuts if using.
- Bake for 35 minutes or until lightly golden on top & around the edges, and firm in the center. Slice into 9 to 12 squares and serve! Store leftovers in the fridge. We love ours reheated and served with a little milk – so good

March 17, 2021 at 6:01 pmThis turned out great!! Based on what I had in the fridge, I sort of combined the apple cinnamon and the berry recipes. I did shredded apple and chopped strawberries. I replaced a half cup of oats with hemp and chia seeds and added some chopped pecans that I wanted to get rid of. Love how adaptable this recipe is and my 1 year old loves it! He had some for breakfast and was making lots of happy noises and then wanted more for his snack (he saw me putting it away and had to have more :D). I will for sure make this again and love that it makes so much so I can freeze half – less food to make for my Starvin Marvin son :p Another winner from Jessie B… not suprirsed
