My Favorite Way to Meal Prep
I am all about the “component meal prep” lately… where I choose a few components to make ahead and keep in the fridge: proteins, side dishes or “bases” and keep easy sauces and fresh veggies on hand. The more versatile, the better. Makes it so easy to throw together a meal any time, and it can be different each time too so I don’t get burnt out on the same thing over & over! These Whole30 Breakfast Hash Power Bowls are the perfect dish to meal prep!
How to make Whole30 Breakfast Hash Power Bowls
Whole30 Breakfast Hash Power Bowls start with a base of an easy hash of pork breakfast sausage + gold potatoes. I can use this as a base for any breakfast (or lunch or dinner) and just add a handful of greens for freshness & nutrients, a fried egg or two on top for extra protein, and a drizzle of any sauce for all the flavor!
Garnishes are game-changers too – some sliced jalapeños or green onion, a dash of “Everything but the Bagel” seasoning, or chopped chives. All about the flavor over here for keeping things fresh & new!

Whenever we have people over for breakfast or brunch (and honestly, even when I’m just feeding us!) it’s so nice to have a bunch of different components prepped so everyone can build their own bowl. So fun, and everyone’s happy. Great for kids too!
Recipe Notes
- We get our Whole30 compliant pork sausage in our ButcherBox. It’s sugar free, ingredients are super clean and simple, and the pork is great quality. It’s what I use in all of my recipes!
- Gold potatoes are our favorite because of their naturally buttery texture, but any potato would work great in this recipe! Sweet potatoes would be awesome.
- Not a fan of eggs, or allergic? Leave them off of your power bowl. This is your meal – build it how you want! Add an extra scoop of your Breakfast Hash, or a couple of slices of bacon.

Whole30 Breakfast Hash Power Bowls
Ingredients
- 1 lb pork sausage
- 6-8 small gold potatoes diced (about 2 cups)
- 1/2 white onion diced
- 1/2 jalapeño seeded & minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- baby spinach
- fried eggs optional
- sliced avocado
- equal parts compliant ranch & hot sauce for drizzling
Instructions
- Heat a large skillet to medium high and add the pork sausage. Cook until browned and crumbled. Use a slotted spoon to remove to a bowl or plate, and set aside.
- To the rendered fat, add the potatoes. Cook over medium, stirring often, for about 5 to 7 minutes. Add the onion, jalapeño, and spices, and continue cooking until the onions are translucent and potatoes are tender.
- Stir the sausage back in and add extra seasonings to taste.
- Scoop the breakfast hash into bowls and add your choice of extras: a handful of fresh spinach, one or two fried eggs, sliced avocado, and a drizzle of spicy ranch. Enjoy!
