Looking for an easy side to pair with just about any protein? My Creamy Ranch Cauliflower Risotto is something I’ve been making for months now, and have been dying to share! It comes together in just minutes and is an easy dairy-free dish you can use in so many meals.
Why We Love This Recipe
I kind of really LOVE those nights when Dathan offers to grill, so our protein is taken care of. That just leaves me with the sides. Roast a veggie or pull out some prepped sweet potatoes… or sauté some kale, and add in this creamy side of goodness. It’s just that extra something that makes a meal feel complete and gives that extra texture we’re wanting, do you know what I mean?
The ingredients are super simple, and the dish comes together in just minutes. Both you know are a big win in my book!
Another plus? Hudson gobbles this up! It must be something about the creamy texture. Plus, he loves the flavor – which this has plenty of!
Here’s What You’ll Need for Creamy Ranch Cauliflower Risotto
- Ghee
- Cauliflower Rice
- Coconut Milk
- Ranch Seasoning Blend
- Salt & Pepper
Notes
- Fresh or frozen cauliflower rice will work the same! Frozen may just need a minute or two longer to cook.
- Not a fan of coconut milk? Allergic? You can substitute any milk that works for you. This recipe is really flexible.
- My “Ranch Seasoning” blend in the recipe below is so good on roasted veggies, potatoes, or in an egg bake or scramble! Make extra while you’ve got the herbs & spices out and store some in a little jar!

Creamy Ranch Cauliflower Risotto
Ingredients
- 1 Tbsp ghee
- 12 oz cauliflower rice fresh or frozen
- 1/4 cup coconut milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried chives
- 1/2 tsp dried dill
- salt & pepper to taste
- chopped fresh parsley or chives optional garnish
- 1/4 cup ranch dressing optional
Instructions
- In a medium saucepan, heat the ghee over medium heat until melted. Add the cauliflower rice and sauté for about 3 minutes to get it cooking.
- Stir in the coconut milk, herbs, and spices, and simmer until the cauliflower is fully cooked and liquid is absorbed, about 5 to 7 more minutes.
- Drizzle with ranch (if using) and garnish with fresh herbs. Add additional seasonings to taste. Enjoy!

September 4, 2019 at 10:57 pmHi there! Yes the recipe is in the box at the bottom of the post! For the ranch blend it’s the blend of seasonings you see listed. Garlic, onion, chive, dill. Salt & pepper to taste!

Serving recommendations are always silly/super subjective to me anyway, but they are necessary in order to calculate nutrition facts, write the recipe in general, etc. But if your family eats several bags of cauliflower rice as a side, then that’s great! You can just multiply and enjoy 🤗
