For the Cookie Bar Base
- 1/3 cup honey or maple syrup
- 1/4 cup butter, coconut oil, or ghee, softened
- 1 egg
- 1 tsp vanilla extract
- 1/3 cup shredded coconut
- 1/3 cup walnuts or pecans, or sliced almonds
- 1 cup almond flour
- 2 tbsp coconut flour
- 1/2 tsp baking soda
- pinch sea salt
For the Strawberry Cheesecake Layer
- 1 1/4 cups raw cashews (soaked in cold water for 2+ hours for the best texture)
- 1/3 cup coconut milk
- 1/4 cup coconut oil
- 1/3 cup honey or maple syrup
- 1 tbsp lemon juice
- 2 tsp vanilla extract
- pinch salt
- 6 large strawberries
