Preheat the oven to 350ºF. In a large bowl, combine the wet ingredients for the crust (softened butter, honey, egg, and vanilla). Mix well, then stir in the dry ingredients (almond flour, coconut flour, baking soda, salt). Transfer to the refrigerator and chill for 20 – 30 minutes or until firm for best texture & baking results.
Line a metal baking sheet or pizza pan with parchment paper (or grease well) and press the cookie dough out on top into a round shape, just smaller than the size you want for your fruit pizza – this will allow a little room for expansion during baking. Transfer to the oven and bake for 15 to 20 minutes, or until light golden brown around the edges. Allow to cool completely.
While the crust cools, work on your frosting. Combine the cream cheese, honey, vanilla, and a splash of your milk of choice and whisk until smooth.
Layer the frosting over top of the cooled “pizza” crust, then top with berries. I like to start at the center with a pattern and work my way out to the edges. Have fun with it!
