Birthday Cake Batter Energy Bites | Paleo, Keto
These Birthday Cake Batter Energy Bites are a wonderful healthy treat option made to give you an energy boost without a sugar crash!

- 1 1/2 cups Raw Cashews
- 1/4 cup Coconut Oil melted
- 1/4 cup Raw Honey (see notes for Keto)
- 1/4 cup Coconut Butter
- 1 tablespoon Ghee
- 1 teaspoon Vanilla Extract
- pinch Salt
- 1/4 cup Sprinkles
Line a plate with parchment paper and set aside
Add the cashews, melted coconut oil, honey, coconut butter, ghee, vanilla and salt to a food processor and pulse until smooth. Pour the sprinkles and pulse a couple more times, just enough to stir in the sprinkles (or mix them by hand!)
Use a cookie scoop to scoop balls of your "batter" onto the lined plate. Transfer to the freezer to set (about 1 hour will firm them up), then store in the refrigerator. Best served chilled.
- For the cashews, I go for cashew “pieces” which blend easier and are often cheaper - especially when buying in bulk! Trader Joe’s and Whole Foods are great places to grab them, or check Amazon!
- To make these keto-friendly, omit the honey and replace with liquid stevia. Add a few drops at a time until you get the level of sweetness you prefer. About ¾ tsp does the trick for me! We use THIS organic liquid stevia.
- Mix in a few scoops of collagen if you want some protein added for post-workout!
